Here's a detailed recipe for Mutton Rogan Josh
Ingredients:
- 500 grams mutton (goat or lamb), cut into pieces
- 1 cup plain yogurt (curd)
- 2 tablespoons oil or ghee
- 2 onions, finely chopped
- 2 teaspoons ginger-garlic paste
- 2 teaspoons Kashmiri red chili powder
- 1 teaspoon fennel powder
- 1 teaspoon garam masala
- 2 tomatoes, chopped
- 2 cups water or meat stock
- Salt to taste
- Fresh coriander leaves for garnish
Marinade:
- 1/2 cup plain yogurt (curd)
- 1 teaspoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
Instructions:
In a bowl, mix together the mutton pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt for the marinade. Let it marinate for at least 2 hours or overnight in the refrigerator.
Heat oil or ghee in a heavy-bottomed pan or pressure cooker over medium heat. Add whole spices like 1-inch cinnamon stick, 3-4 cloves, 3-4 green cardamom pods, and 2 bay leaves. Sauté them for a minute until they release their aroma.
Add the finely chopped onions to the pan and cook until golden brown, stirring occasionally to avoid burning.
Add the marinated mutton to the pan and cook until the meat is browned on all sides. This step helps seal in the flavors.
Add the Kashmiri red chili powder, fennel powder, and garam masala to the pan. Stir well to coat the meat with the spices.
Add the chopped tomatoes and cook until they soften.
Pour in the water or meat stock, enough to cover the meat. Stir, cover the pan, and let it simmer on low heat for about 1.5 to 2 hours until the mutton becomes tender. If using a pressure cooker, cook for a few whistles until the meat is cooked through.
Adjust the consistency of the gravy by adding more water or reducing it further. Taste and adjust the salt and spices according to your preference.
Garnish with fresh coriander leaves.
Your Mutton Rogan Josh is now ready to be served hot with steamed rice, naan, or roti.
Enjoy your delicious Mutton Rogan Josh!
